How often should I sharpen my knife?

Sharpen when the edge stops biting — when it slides on paper or crushes rather than slices. For light everyday cutting that might be every few weeks; heavy use, sooner. Frequent light honing on a strop or fine stone keeps a working edge and delays full resharpening, which removes more steel.
